Today I am going tointroduce How to make Tokyo-style Ozoni and Kombu soup stock.
In Japan, we eat Ozoni on New Year's Day.
Today, I would like to introduce 100% plant-based Ozoni in the Tokyo style.
Ozoni in the Tokyo style is a simple bowl of clear soup with square mochi rice cake and vegetables.
Because there are few ingredients, we have to make delicious soup stock.
It's very easy to make Shojin dashi, the Japanese vegan dashi.
★Ingredients
3 servings
3 Mochi
3 strains of spinach
2 cm Carrot
3 taro
Pinch of salt
1/4 tsp Usukuchi soy sauce
3 Shiitake mushroom
Small piece of shaved Yuzu peel
【Ozoni soup】
600ml Kombu soup stock
1/4 tsp Salt
1/2 tbsp Usukuchi soy sauce or soy sauce
【Shojin dashi】
Komb 15cm×5cm
1L Water
