Serundeng for Urap Sayur
(Indonesian vegetable salad)
Ingredients:
• 1 large red bell paprika
• 2 big shallots
• 5 cloves garlic
• 1/2 piece palm sugar
• 3 kaffir lime leaves
• 100 ml tamarind water
• 250g grated coconut
• 2–3 tsp kencur powder (aromatic ginger powder)
• 1 tsp salt
Instructions:
1. Blend the red paprika, shallots, garlic, palm sugar, kaffir lime leaves, and tamarind water until smooth.
2. Heat a pan over medium heat.
3. Pour the blended mixture into the pan, then add the grated coconut, kencur powder, and salt.
4. Cook while stirring occasionally until the coconut turns golden and fragrant, becoming serundeng while still slightly moist to your preference.
5. Remove from heat. Your serundeng is ready to enjoy with rice or to use as a topping for urap sayur (Indonesian steamed vegetable salad).
