Creamy and delicious vegan soy milk ramen
Recipe Ingredients

<For two people>
・Chinese noodles 2 servings
・Garlic chives 1/2 bunch (60g)
・Carrot 1/3 medium (60g)
・Green onion 1/2 medium (50g)
・Garlic 1 clove (6g)
・Sesame oil 1 tbsp (12g)
・Doubanjiang 1 tsp (5g)
・Water 300ml
・Sliced dried shiitake mushrooms 5g
・White sesame paste 4 tbsp (60g)
・Miso 2 tbsp (36g)
・Soy sauce 2 tbsp (36g)
・Vinegar 2 tsp (10g)
・Beet sugar 2 tsp (8g)
・Unflavored soy milk 360ml
・Chili oil To taste

Cut the vegetables to your preferred size and set them aside.
Garlic can be minced or use paste—either works.
I used paste to save time.
Feel free to add whatever vegetables you have at home.
Heat a pot over low heat, then add sesame oil, garlic, and doubanjiang.
Sauté slowly over low heat to bring out the aroma.
Add the green onions and stir-fry. If you don't have green onions, onions work too.
Add the carrots, water, and dried shiitake mushrooms.
The dried shiitake mushrooms can be added as is.
Add vinegar, soy sauce, miso, sugar, and white sesame paste, then mix.
Separately, boil water and cook the Chinese noodles.
Add soy milk, warm it up, and the soup is ready.
Pour it over the noodles and enjoy while hot.
This time, I introduced it as a ramen recipe, but I think it would also be delicious over udon noodles or rice.
