Today I will share with you the recipe of Japanese cheesecake. It is super moist and fluffy and it is very easy to make. You will love it.
🍞Ingredients
1. Yolk Batter
Cake Flour 20g
Corn Starch 10g
Cream Cheese 100g
Milk 60g
Butter 28g (2 Tbsp)
Egg Yolk 2 Pc (jumbo eggs)
2. Meringue
Egg White 2 Pc (jumbo eggs)
Sugar 35g
White Vinegar 5g
Place on mid-lower rack in the oven
Bake 20 minutes at 300F/150C, 40 minutes at 255F/125C, then 5~8 minutes at 375F/190C for color
It taste better after refrigeration
🍞所用材料:
1. 蛋黄糊
低筋面粉 20g
玉米淀粉 10g
奶油奶酪 100g
牛奶 60g
黄油 28g (2 Tbsp)
蛋黄 2 Pc (超大号鸡蛋)
2. 蛋白霜
蛋白 2 Pc (jumbo eggs)
糖 35g
白醋 5g
放入烤箱中下层
300F/150C烤20分钟,255F/125C烤40分钟,最后375F/190C烤5~8分钟上色
冷藏之后味道更佳
先高温后低温,是为了避免出现布丁层。放入烤箱中下层可以避免蛋糕开裂。
水浴的水用常温水即可,不要用开水,否则容易开裂。
