How to make Coffee Cheese Pandesal
✅Ingredients:
2 ¼ teaspoons active dry yeast
¼ cup warm water (105-115F)
¾ cup sugar, 1 tablespoon separated for proofing
1 cup warm milk
2 ounces softened butter
2 eggs, lightly beaten
1 ½ teaspoon salt
Coffee mixture: 2 tablespoons instant coffee + 1 tablespoon hot water
4 ¼ cups all-purpose flour
Quickmelt cheese, sliced into 1-inch pieces
½ cup graham crumbs
½ cup bread crumbs
✅Instructions:
In a mixing bowl, combine yeast, warm water, and sugar. Let it sit for about 5 minutes, until it is frothy. Add warm milk, softened butter, beaten eggs, sugar, salt, and coffee mixture. Stir until well combined.
Add 2 ¼ cups of all-purpose flour to the stand mixer bowl and, with the dough hook attachment, mix on low speed until the flour is moistened. Increase speed until fully incorporated.
Add 2 cups of flour gradually. Keep mixing until the dough starts to gather in the center (add ½ cup flour if the dough is too wet).
On a lightly greased surface, knead the dough until smooth and elastic. Place kneaded dough in a lightly oiled bowl. Cover with a cloth and allow to rise for about 1 to 1 ½ hours.
Gently deflate the dough and turn it over on the working surface. Shape into a log and divide into 24 portions. Take 1 portion and flatten it with your palms. Place the cheese in the center, fold the edges, press to seal, and shape into a smooth ball.
Dredge the dough in the combined graham and bread crumbs until fully coated. Repeat the same with the remaining dough and cheese. Arrange the dough balls in a parchment-lined baking sheet. Cover and allow to rise for about 1 hour.
Bake in a preheated 350°F (180 °C) oven for 18-20 minutes. Remove from the oven. Serve and enjoy!
