Let our nutritionist, Rachel, show you the right balance of ingredients to make a local favourite cake!
Step by Step Guide:
1. Sift cake flour, wholemeal flour and baking powder into a mixing bowl.
2. Blend together coconut milk and pandan leaves until fine. Using a strainer, extract the pandan milk mixture and set aside.
3. Manually whisk egg yolks, 3 tablespoons of sugar and sunflower until well combined. Add pandan milk mixture and mix well. Then, set aside.
4. Using an electric mixer, whisk egg whites in a large clean mixing bowl on low speed until large bubbles are formed (approx. 1 minute). Add cream of tar tar and continue to whisk until small bubbles are formed (approx. 1 to 2 minutes). Add remaining 3 tablespoons of sugar gradually and whisk on high speed until stiff peak (approx. 10 minutes).
5. Remove the egg white mixture from electric mixer. Using the spatula, gently fold in the pandan mixture from Step 3 without deflating the egg white mixture, until just well mixed. Using the same technique, gently fold in sifted dry ingredients in parts from Step 1 and mix until well combined.
6. Pour the final batter into a greased 5-inch round cake tin. Place the cake tin into the steamer and steam for 20 minutes or until thoroughly cooked.
7. Remove cake from the tin and allow to cool completely before serving.
