Mahshi (Stuffed Vegetables)
Ingredients:
1 cup rice
1 onion (finely chopped)
1 tbsp tomato paste
Fresh parsley, dill, and cilantro (chopped)
Bell peppers, zucchini, eggplants (hollowed out)
Instructions:
Mix rice, chopped herbs, tomato paste, and onions.
Stuff the hollowed vegetables with the rice mixture.
Place them in a pot, cover with water, and add a bit of tomato sauce.
Simmer on low heat for 45-60 minutes until vegetables are tender.
