The origins of Mahshi can be traced back to ancient Egypt, where stuffed vegetables and birds were a common dish.
The word "mahshi" in Arabic literally means "stuffed". When this word is used on its own, it generally refers to an assortment of vegetables that have been stuffed with seasoned Egyptian short grain rice and cooked in broth.
In Cairo, mahshi is mostly made with green bell pepper, zucchini, eggplant, vine leaves and cabbage.
In rural Egypt, mahshi is extended to almost any vegetable or leaf that can be stuffed: onions, tomatoes, potatoes, radish leaves, lettuce leaves, dill and the list goes on. It is eaten as the main starch component in a meal accompanying other vegetables such as Molokhia and meat- based dishes.
Today, Mahshi is a popular vegetarian option in Egyptian cuisine and can be found in restaurants and street food vendors throughout the country.
Its versatility and delicious taste have made it a staple in Egyptian households and an essential dish for special occasions and gatherings.
