Vietnamese Pork and seafood noodles soup originally came from South Vietnam,. The soup consists of mostly pork ans seafood, and is is very popular than the other noodle dishes
Ingredients for the broth
3 pound of pork bones
1 pound of pork loin
10 cups of water
200 g of yellow rock sugar( 2 tablespoons of sugar)
1 teaspoon of salt
1 teaspoon of fish sauce
1/2 cup of dried shrimp
2 tablespoons of minced roasted garlic
1/2 cup of scallion- cut into 1 1/2 inches
1 tablespoon of mushroom seasoning
add all ingredients into a pot and set to boil, skim off any fat that floating on top of the pot, turn the heat down to medium and simmer for 3 hours
continue to simmer the broth for another 1/2 hour. remove pork loin from the pot and cut into thin slices
Heat up the non stick pan with 1 tablespoon of olive oil, add scallion into the pan and light saute until turn golden, add to the broth.
in the pot add 2 cups of water bring to boil , add shrimps, calamari for 10 minutes , drain and set aside for later use
Heat up a pot of water and cook the rice noodle for 2 minutes, then chill under running tap water then rinse dry..Do the same for yellow noodle
Place chive,bean sprout and celery leaves in the bowl, place noodle on each bowl as the base ingredient, add shrimp, pork, calamari,pork slices,Pour hearty amount of broth into the bowl the sprinkle scallion and add lemon, basil and fresh hot chili . Ready to serve
