How to Make Fish Broth | Trinidad & Tobago 🇹🇹

Fish Broth Recipe:
Ingredients:
1 medium onion
6 cloves garlic
1 hot pepper (I used scotch bonnet)
3 pimento peppers
4 sprigs thyme
1 bundle chives chopped
2 tbsp blended shadon beni
2 tsp chopped parsley
2 tbsp oil
2 tbsp golden ray butter
1 medium sweet potato (cut into large pieces)
3 medium potatoes
1 small hand of green figs peeled and cut in halves
1/4 of a medium sized pumpkin (cut into small pieces)
4 ochroes (cut in halves)
3 leaves of patchoi (cut into large pieces)
2 medium carrots chopped into medium sized pieces
1 small package of macaroni
1 medium sized carite fish seasoned (also suggest cro cro, red fish, king fish)
2 tsp maggi fish seasoning
juice of 1 lime
salt and black pepper to taste
Method:
1. Heat oil and golden ray butter in large pot, add onions, garlic and pimento and cook until softened
2. Add sweet potato and pumpkin and saute for about 1-2 mins
3. Add water to full pot 2/3 and bring to a boil
4. Add shadon beni, chopped chives, thyme, parsley, salt, black pepper, hot pepper (whole) and maggi fish seasoning
5. Add potatoes and when half cooked add in green figs, carrots, and ocroes
6. Smash pumpkin pieces with spoon to melt into broth
7. When the provisions are almost cooked through add in macaroni, fish and patchoi leaves
8. Once fish is cooked (takes a few mins) and macaroni is al dente add in lime juice and mix
9. Enjoy hot with some lime pepper sauce
Lime Pepper Sauce:
Mix the juice of 3 limes, 1 hot pepper chopped, 1 clove of garlic minced, salt and black pepper to taste.
