My Perfect Sandwich | The 48hr Short Rib "Grilled Cheese"

Ingredients in estimations of enjoyment:
Quality bread
Short ribs
Spicy melting cheese (I used colby jack and Ghost pepper cheddar)
Poblano pepper or roasting pepper of your choosing
Butter
Salt/Pepper
Olive oil
How I cooked this:
Heavily salt/pepper short rib(s) and vacuum seal. Sous vide at 140f for 48 hours.
Remove and sear short rib(s) on very high heat in olive oil. Rest.
Roast poblano over direct flame till charred and place in covered bowl for 15 mins
Slice bread
With knife, scrape off skin from poblano and chop into pieces of your preferred size.
Slice/chop short rib(s)
Toast one side of bread pieces in short rib fat till golden.
Grate cheeses into quantity that makes your soul happy
Build sandwich with cheese/short rib/pepper with un toasted sides of bread outwards.
Add butter to pan and grill on low heat till cheese is melted and bread it toasted golden.
Slice and enjoy with a hoppy amber beer or a root beer/loganberry juice depending on preference/geography.
