RECIPE
Ingredients
Spinach sponge
• 200 g fresh spinach
• 3 eggs (separate whites and yolks)
• 2 tbsp olive oil
• 70 g flour (all-purpose or gluten-free)
• salt
• black pepper
Cream filling
• 100 ml heavy cream
• 250 g cream cheese
• 1 tsp lemon juice
• lemon zest
For filling
• smoked salmon

Instructions
1. Preheat oven to 180°C / 350°F.
2. Blend spinach, egg yolks, salt and pepper until smooth.
3. Add olive oil and mix.
4. Stir in the flour until combined.
5. In a separate bowl beat egg whites with a pinch of salt until stiff peaks form.
6. Gently fold the egg whites into the spinach batter.
7. Spread the batter evenly on a parchment-lined baking tray.
8. Bake for 12–14 minutes until set.
9. Let the spinach sponge cool slightly.
Cream filling
10. Whip heavy cream until soft peaks form.
11. Fold in cream cheese.
12. Add lemon zest and lemon juice and mix gently.
Assemble
13. Spread the cream filling over the spinach sponge.
14. Add smoked salmon evenly.
15. Carefully roll into a log.
16. Decorate with remaining cream and lemon zest.
17. Slice and serve.
