Punjabi Atta Khoya Pinni is a traditional Punjabi winter delicacy made with wheat flour, ghee, and loads of dry fruits. Either Jaggery or sugar can be used as the sweetener, and the result is a wholesome sweet that is truly meant for the harsh winters of North India.

Let’s get started:
Ingredients:
Atta (Wheat flour) – 2cups
Ghee – 1 cup
Khaand (unrefined sugar)/sugar – 1 cup
Cardamom powder – ½ tsp
Khoya – 200gms
Almonds chopped – ¼ cup
Cashewnuts chopped – ¼ cup
Makhane chopped – ¼ cup
A pinch of black pepper powder & sonth powder
Steps:
Heat a little ghee and lightly fry the almonds, cashews & makhane. Also roast khoya a little bit. Remove and keep aside.
Grind the nuts coarsely and keep it aside.
In the same kadhai, heat 1 cup ghee and roast 2 cups of atta. Cook atta on low heat till it browns and releases ghee. Remove it from gas and transfer into bowl or thali.
Now add the khoya, cardamom powders and khaand/sugar. Mix them up along with dry fruits. Lastly add a pinch of black pepper powder and sonth powder
Take mixture in your hand and squeeze to make a shape.
Shape them like the typical pinnis with finger marks and garnish with almond slice.
