Khasta Papdi chaat is a popular North Indian street food snack filled with a variety of mouth-watering textures and flavors. Papri Chaat includes potatoes, various chutneys, yogurt, papdi, curd, & sev/boondi. Serve this tasty dish immediately as a snack. Here we are making U.P special Khasta Papdi Chaat, very flavourful and delicious.

Let’s get started
Ingredients:
500gms Maida
1/2tbsp Ajwain
1/2tbsp Black pepper powder
1tbsp salt
3-4tbsp Oil
Water for kneading dough
Oil for frying
For Papdi Chaat
1 cup yogurt/curd- whisked till smooth, cold and fresh
½ cup mint chutney
½ cup tamarind dates chutney
1 teaspoon kashmiri red chili powder - optional
1 teaspoon roasted cumin powder
1 to 2 teaspoons chaat masala
1 teaspoon black salt or edible rock salt or regular salt, add as required
1 boiled potatoes diced
½ cup sev/choti pakodi/boondi
Method:
For making Khasta Papdi
Mix all purpose flour (maida), carom seeds (ajwain), black pepper powder and salt in a large mixing bowl.
Rub or mix ghee in the dough with your finger tips, till you get a bread crumb like texture in the mixture.Add water bit by bit and knead to a firm and tight dough. Keep covered for 15 minutes.Knead again and divide the dough into equal balls.
Roll each dough ball thin with a rolling pin. Don't roll very thin.make tiny balls and then roll each into a small round puri.
Prick the cut out papdis or small puris with fork, so that they don't puff while frying and become crisp.Heat oil for deep frying in a kadai.
For assembling Khasta papdi chaat
Arrange 6 to 8 Khasta papdi in a shallow bowl or plate.
Top it up with some of the chopped boiled potato cubes sprinkle some Bhuna Jeera & chaat masala
Sprinkle some chaat masala, roasted cumin powder and optionally kashmiri red chili powder on it, if you want at this step.
Top these with whisked cold curd (yogurt) as you like.
Top it up evenly with 1 to 2 tablespoons of the green chutney as much as you want.
Then add 2 to 3 tablespoons of the sweet tamarind chutney. According to your taste preferences you can add less or more of each chutney.
Sprinkle some chaat masala, red chili powder, cumin powder and black salt or regular salt.
Garnish with Dahi boondi.
Serve papdi chaat immediately.
