It is a naturally occurring species that also has many cultivated forms, including the globe artichoke. It is native to the western and central Mediterranean region, where it was domesticated in ancient times and still occurs as a wild plant

📔 Cardoon Recipe
Cut and clean the filaments from the thistle.
Soak it in water and lemon (so it doesn't darken).
Put water and lemon in a saucepan and bring the thistle to the boil for 15 minutes. Drain.
Prepare breadcrumbs with minced garlic inside.
Cut the thistle into thin strips, put it in a pan to brown with oil and previously prepared breadcrumbs.
Turn occasionally, when the bread is toasted the dish is ready.
Add grain as desired.
