Tater Tot Breakfast Casserole
Ingredients
8 eggs
½ cup Carnation Evaporated Milk
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon pepper
16oz breakfast sausage
2 cups sharp cheddar cheese
½ cup mozzarella cheese
1 28-32oz package frozen tater tots
How to make tater tot breakfast casserole
1. Preheat the oven to 350 degrees. Grease a 9x13 baking pan or casserole dish with cooking spray and set aside.
2. Over medium heat, cook breakfast sausage in a large skillet according to the package directions. Drain any grease and spread the breakfast sausage evenly in the prepared baking pan.
3. Add the eggs, salt, onion powder, garlic powder, pepper, and Carnation Evaporated Milk in a large bowl. Whisk until everything is combined and the eggs become a pale yellow. Pour half of the cheese into the egg mixture and whisk until combined.
4. Pour the egg mixture over the top of the sausage and place frozen tater tots evenly over the top of the egg mixture. Place in the oven and bake uncovered for 35-40 minutes. Remove the casserole from the oven (it's ok if there are still a few spots that aren’t fully cooked. It’ll fully cook in the next step). Add the remaining cheese over the top and bake for another 5 minutes until the cheese is nice and melty.
5. Remove from the oven and allow the casserole to sit for a few minutes before serving.
