This recipe uses simple ingredients and low-effort techniques, making it great for anyone starting their journey into preserving and self-reliance. I’ll walk you through every step, share a few lessons (and bloopers) along the way, and explain the why behind the process—not just the how

Whether you’re here to learn, pick up tips, or just enjoy watching me wrestle with 3kg of onions 🧅, I’ll walk you through everything—from slicing and caramelising to jar sterilising and clean up hacks. This recipe is beginner-friendly, pantry-stable for up to a year, and bursting with flavour

🔖 Ingredients List:
• 3kg red onions
• 6 tbsp olive oil
• 600g Muscovado sugar (I used 150g brown sugar as backup)
• 400ml red wine vinegar
• 6 tbsp balsamic vinegar
• 6 cloves garlic
• 2 tbsp wholegrain mustard
• 1 tsp salt, 1 tsp paprika, ½ tsp crushed chillies
