🥓Bacon is good, but Guanciale is "liquid gold." In Episode 6 of my Vancouver Island series, I’m showing you why I stop using cooking oil when I have cured pork cheek.
📍We are visiting the Gardens at Hatley Castle for some peace, heading to Ottavio in Oak Bay to source authentic Italian Guanciale and then cooking a one-pan dinner at the private beach house in East Sooke. This is the "Flavour Ladder" technique: Render the fat, fry the potatoes and butter poach the cod.
🛒 Ingredients
• The "Gold": 150g Guanciale (Cured Pork Cheek). Do not use bacon if you can help it; bacon is too smoky and will overpower the delicate cod
• The Starch: 1 lb Small Yellow Potatoes
• The Fish: 2 Fresh Cod Fillets (Skinless works best for this butter-basting method)
• The Fat: 2 tbsp Unsalted Butter
• The Finish: Fresh Dill (lots of it) and Sea Salt
