Easy Homemade Pancakes - Just 4 ingredients

Do you want a mega easy way to make delicious pancakes fresh at home and just 4 ingredients. If yes, this is the tutorial for you.
This tutorial explains how I add in extra nutrients which worked perfectly when my Son was taking his exams and kept him fuller for longer.
Ingredients
200g self raising flour
300ml whole milk
1 large egg (at room temperature)
1 teaspoon of baking powder (to make them thicker)
15g milled flaxseeds - optional but gives a nutrient boost
Method
Add the flour, baking powder and egg into a medium size mixing bowl. (If you are going to use flaxseeds add them in now.)
To reduce the chance of having a 'lumpy' mixture we are going to add the milk in stages.
Add a third of the milk into the dry ingredients and using a whisk, start mixing it all together, the mixture will be really thick so it's time to start adding more milk.
Keep adding the milk in a bit at a time, whisking it to combine. Keep going until you have used up all of the milk.
When all of the milk is added, whisk for a couple of minutes to give the pancake batter extra 'fluffiness'.
Transfer the mixture to a container so it can be stored in the fridge. If you are making pancakes straight away then I'd transfer it to a jug to make it easier to pour.
I dry fry my pancakes so heat up a non-stick frying pan and when it's hot, pour a small amount onto the pan.
When it's cooked there will be bubbles appearing on the top and then flip it over to cook on the other side - 1 minute per side should be long enough.
Any left over mixture can be stored in the fridge for a couple of days. You may notice the mixture thickens up in the fridge so add a splash of milk and give it a mix before using.
Note: If you like your pancakes thinner then by adding a splash of milk at the start will give you a runnier mixture and thinner pancakes.
