Chicken Fried Rice (Chinese Style)
Ingredients (serves 2–3)
Main
• 2 cups cooked rice, cold (preferably day-old, medium or long grain)
• 1 cup chicken breast or thigh, finely diced
• 2 eggs, beaten
• 2–3 tbsp oil (peanut, vegetable, or canola)
Vegetables
• ½ cup green onions (spring onions), chopped
• ½ cup carrots, finely diced
• ½ cup green peas (optional)
Seasoning
• 1½ tbsp light soy sauce
• 1 tsp dark soy sauce (for color, optional)
• ½ tsp salt (adjust to taste)
• ¼ tsp white pepper (or black pepper)
• 1 tsp sesame oil (optional but recommended)
Chicken Marinade (important)
• 1 tsp light soy sauce
• ½ tsp cornstarch
• ½ tsp oil

Instructions
1. Prepare the chicken
• Mix chicken with marinade ingredients.
• Set aside for 10 minutes.
2. Scramble the eggs
• Heat 1 tbsp oil in a wok or large pan over high heat.
• Add eggs, scramble quickly, remove, and set aside.
3. Cook the chicken
• Add another tbsp oil.
• Stir-fry chicken until just cooked and lightly golden.
• Remove and set aside.
4. Stir-fry vegetables
• Add a little more oil if needed.
• Fry carrots and peas for 1–2 minutes.
• Add the white part of green onions.
5. Add rice
• Add cold rice, breaking up clumps.
• Spread it out and let it sit for 20–30 seconds before stirring.
• Stir-fry for 2–3 minutes until hot and slightly toasted.
6. Season
• Add light soy sauce, dark soy sauce, salt, and pepper.
• Toss well to evenly coat the rice.
7. Combine everything
• Add chicken and eggs back in.
• Toss on high heat for another 1–2 minutes.
8. Finish
• Add sesame oil and green onion tops.
• Stir once more and turn off heat.
