This hearty Soto Ayam, an Indonesian soup, is the perfect one-bowl meal. Ingredients :
Spice Paste
1 cup chopped shallots
1 tablespoon ground turmeric
4 medium garlic cloves
1 (3-inch) piece fresh ginger, peeled and roughly chopped
1 (2-inch) piece fresh galangal, peeled and sliced
2 tablespoons margarine
Soup
1 lemongrass stalk, trimmed
3 fresh makrut lime leaves
2 fresh bay leaves
8 cups water, plus more as needed
4 cups unsalted chicken broth
1 tablespoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper
1 (3 1/2-pound) whole chicken
1 (8.8-ounce) pkg. rice vermicelli noodles, prepared according to pkg. directions
1 cup fresh bean sprouts
1 cup thinly sliced napa cabbage
4 hard-boiled eggs, peeled and quartered
¼ cup thinly sliced scallions
¼ cup fried shallots (such as Maesri)
2 limes, cut into wedges
