PEANUT SAUCE
Into a magic bullet, blender, or bowl, combine…
• 4 Tablespoons Tamari or Soya Sauce
• 3 Tbsp Sesame seeds
• 4 Cloves Chopped Garlic (finely chop into a paste if making your sauce in a bowl)
• 1/2 Cup Nut Butter (whatever you enjoy)
• 2 Tbsp Sesame oil
• 1 Tbsp Sambal Oelek
• 3 Tbsp Real Maple Syrup (or honey)
• 4 Tbsp Rice Wine Vinegar
• 1/3 Cup Water
Blend till pulverized. It’s ready to go!
Brown Rice
• 1.5 cups rice
• 2 2/3 cups water
• ¾ tsp kosher salt
• Follow package directions for cooking time
Cooked chicken *if using
• Cook as much chicken as you like, breast or thigh, any way you like! Bake, grill,
pan fry… with salt and pepper only
Shredded Red Cabbage
• About 1.5 cups
Curried Chickpeas
• Combine one 14 oz can of coconut milk with 1 heaping tablespoon of red thai
curry paste and one 14 oz can of drained chickpeas
• Simmer over medium heat stirring occasionally to break up the curry paste
• Once the paste is fully incorporated let the chickpeas simmer until the liquid
reduces about 25% or to your desired thickness and sauciness.
Shredded Carrots
• Get a bag of pre shredded carrots or shred a few yourself using the large holes of
a box grater
Shredded Beets
• Shred about 4 red beets using a mandolin or box grater
• Leave them raw for extra nutrition and crunch!
Lettuce
• 1 small container of spring mix or any salad greens your prefer
Peanuts
• Finely cup about 1 cup of roasted peanuts
Cilantro
• Roughly chop about 1 cup of fresh cilantro
Assemble your buddha bowls with your grain on the bottom, then greens, top with protein, add your sauce, and crown them with your tasty toppers.
