INGREDIENTS:
Dough:
• 1 packet (or 1 tbsp) Instant Yeast (or 1/2 packet Fresh Yeast)
• 1 tbsp Granulated Sugar
• 1 cup Lukewarm Water
• 1 cup Lukewarm Milk
• 1/4 cup Vegetable Oil (plus extra for kneading)
• 1 tbsp Flour (initial mix)
• 1 tsp Salt
• Approximately 5 cups All-Purpose Flour (add gradually)
Lamination Mixture:
• 1/2 cup Melted Butter
• 1/4 cup Vegetable Oil
Filling:
• Village Cheese (or desired filling)
Topping:
• 1 Egg Yolk mixed with a splash of Milk
• Black Cumin Seeds and Sesame Seeds
INSTRUCTIONS:
1. Activate Yeast: In a bowl, combine yeast, sugar, lukewarm water, and lukewarm milk. Stir until dissolved.
2. Mix Dough: Add 1/4 cup vegetable oil, the 1 tbsp flour, and salt. Gradually add the main portion of flour until a soft, slightly sticky dough forms (approx. 5 cups).
3. Kneading & Rise: Knead until smooth. Pour remaining vegetable oil over the dough and knead briefly. Cover and let rise for about 30 minutes in a warm place.
4. Portion: Punch down the dough, shape into a cylinder, and cut into 9-10 equal pieces. Roll into smooth balls and let rest for 5 minutes.
5. Layering & Filling: Melt butter and mix with vegetable oil. Roll each dough ball into a thin oval. Brush generously with the oil/butter mixture.
