🥩 Cozy Stovetop Beef Stew (Simple & So Good)

This is the exact beef stew I made — simple ingredients and so comforting.

Ingredients:

1½–2 lbs beef stew meat

Salt & pepper & garlic powder

2 tbsp olive oil

1 medium onion, chopped

1 packet onion soup mix

3–4 cups beef broth

1 bag baby carrots

1½–2 lbs baby gold potatoes

TBS of Worcestershire sauce

Instructions (Stovetop):

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Season beef with salt and pepper and brown on all sides. Remove and set aside.

Add chopped onion to the pot and sauté until softened.

Add 2 tbs tomato paste and stir for 30 seconds

Sprinkle in the onion soup mix and stir well.

Return the beef to the pot and pour in enough beef broth to mostly cover the meat.

Add carrots and baby gold potatoes.

Bring to a gentle boil, then reduce heat to low, COVER, and simmer for 1½–2 hours, stirring occasionally, until beef is tender and vegetables are soft.

Taste and adjust seasoning if needed before serving.
