FOUR BEAN SALAD

Ingredients

½ cup red kidney beans (rajma), soaked overnight and boiled with salt
½ cup soya beans, soaked and boiled with salt
½ cup whole green gram (sabut moong), soaked and boiled with salt
100 gms French beans, cut into ½ inch pieces and blanched
3 inch ginger piece
1 tsp red chilli sauce
1 tsp mixed fruit jam
Salt to taste
1 tsp vinegar
A few lettuce leaves

Method

1. Place kidney beans, soya beans, moong beans and French beans in a bowl and mix well.
2. Roughly chop ginger, grind with a little water, pass through a muslin cloth and squeeze out the juice.
3. Add 1 tsp of ginger juice to the beans and mix well. Add red chilli sauce, mixed fruit jam, salt, vinegar and mix well.
4. Tear a few lettuce leaves and add. Mix well and transfer into a serving bowl. Serve immediately.
