Helloooo, for my first video, I’m making artisan bread with a twist: gochujang and roasted garlic. Come hang out and see what kind of loaf I manage to pull off. 🙂↕️
Recipe details:
All-purpose flour: 420 g (plus more for dusting)
Lukewarm water: 300 g / 1 ¼ cup (35–45°C)
Kosher salt: 8 g (2 tsp)
Dried yeast: 7 g (2 tsp)
Gochujang: 50 g
Garlic: 2 heads
Quick rundown:
Wrap garlic in foil with salt, pepper, and olive oil. Roast at 250°C for 30 mins.
Mix everything together, knead until smooth, then prove for 2 hours under a damp towel. Every 30 mins, fold the dough with wet hands.
Preheat oven to 230°C (450°F). Bake in a Dutch oven with lid on for 30–35 mins. Remove lid, lower to 200°C (400°F), and bake another 10 mins (or until the crust looks perfect).
