3 tbsp Oil
2 Bay Leaves
1 tsp Cumin Seeds / Jeera
1 Dry Red Chili
1/8 tsp Asafoetida / Hing
3 cloves Crushed Garlic
1 inch Crushed Ginger
1.5 cups (1 big) Onion, finely chopped
2 Large Carrots, roughly chopped into 1 inch
2 Large Potatoes, roughly chopped into 1 inch
1 tsp Salt (as required)
1/2 cup Fresh Green Peas OR Frozen
1 tsp Coriander Powder
1/4 tsp Turmeric Powder
3/4 tsp Red Chili Powder
1/2 tsp Dry Mango Powder
1 tsp Kasuri Methi / Dry fenugreek leaves
1 cup Tomato puree (blend fresh tomatoes into puree)
1 Green Chili, slit
1/2 tsp Garam Masala
Few Cilantro / Coriander Leaves
