食譜及做法:
高筋粉 200g
奶粉10g(可以省略)
糖 24g
鹽 2g
酵母 3g
蛋 32g
淡忌廉 24g
煉奶 40g
溫水 64g
牛油 10g
麵團:8條
材料全部混合(牛油除外)
麵團成團後 加入牛油
麵團靜置30分鐘
取出搓成光滑麵團
第一次發酵 約1小時
取出排氣
滾圓
麵團休息15分鐘
造型
放入模具
第二次發酵 約1小時
掃上蛋液
180度 焗30分鐘
Recipe and method:
200g Bread flour
10g milk powder (can be omitted)
24g sugar
2g salt
3g yeast
32g egg
24g Heavy cream
40g condensed milk
64g warm water
10g butter
Dough: 8 pieces
Mix all ingredients (except butter)
Add butter after dough is formed
Let dough rest for 30 minutes
Take out and roll into smooth dough
First fermentation about 1 hour
Take out and exhaust
Roll into a ball Let dough rest for 15 minutes
Shape Put into mold
Second fermentation about 1 hour
Spray with egg liquid
Bake at 180 degrees for 30 minutes
