食譜及做法:
高筋粉 150g
黑麥芽粉 7g
黑糖蜜 Molasses 30g
鹽 1g
酵母 3g
清水 85g
牛油 20g
麵團:
材料全部混合(牛油除外)
麵團成團後 加入牛油
麵團靜置30分鐘
取出
搓揉約3分鐘
第一次發酵 約1小時
取出排氣
滾圓
麵團休息15分鐘
造型
第二次發酵 約1小時
灑上粟米粉(可以用高筋粉代替)
180度焗30分鐘
Recipe and Instructions:
150g bread flour
7g dark malt flour
30g blackstrap molasses
1g salt
3g yeast
85g water
20g butter
Dough:
Combine all ingredients (except the butter)
Once the dough is formed into a ball, add the butter
Let the dough rest for 30 minutes
Remove the dough from the dough
Knead for about 3 minutes
First rise for about 1 hour
Remove the dough from the dough to deflate it
Roll into a ball
Let the dough rest for 15 minutes
Shape
Second rise for about 1 hour
Sprinkle with cornstarch (bread flour can be substituted)
Bake at 180°C for 30 minutes
