🥜 Ingredients
• Brinjal (eggplant), sliced
• Groundnuts (peanuts)
• Oil
• Mustard seeds
• Cumin seeds (jeera)
• Dry red chilli
• Green chillies
• Curry leaves
• Onions, sliced
• Turmeric powder
• Red chilli powder
• Salt
• Garam masala
• Fresh coriander leaves
👩🍳 Method
First, dry roast groundnuts on low flame and grind into a fine powder.
Heat oil in a pan and add mustard, cumin, red chilli, green chillies, and curry leaves.
Add sliced onions and sauté until soft.
Mix in turmeric, then add brinjal pieces and cook covered until tender.
Add salt, peanut powder, and red chilli powder. Mix well and cook for a few more minutes.
Finish with garam masala and garnish with fresh coriander.
