**Parmesan crusted Spot Fin Croaker**

Potato Buns
1/2 stick Butter for frying
Romaine lettuce for topping
White fish of choice (sprinkled with garlic salt and pepper)

Dip in 1/4 C Flour for first coating
2 eggs scrambled for second coating

Crust:
1/2C panco
1/4C Parmesan
1Tsp onion powder
1Tsp garlic salt
1Tsp paprika
1Tsp lemon zest

Relish/Sauce
1/4 cup mayo
3 tablespoons parmesan
1 tablespoon Fresh dill
1 tablespoon chopped fresh Chives
1Tsp garlic salt
2 tablespoons Dill relish
