Friends, In the series of vegetarian dishes, today I am presenting you 'Achari Baingan Masala; If you are fond of 'Bharwa Baingan', You will definitely like this recipe as I have tried to improve the taste of the traditional Bharwa Baingan recipe by adding a small effort. So without wasting much of your time, let's start Achaari Baingan Masala.
Cooking Steps:
These are 500 grams of small-sized eggplants. These are 3 large-sized onions that I have blended into a paste. These are 2 large-sized tomatoes, again I have blended these into a paste. I have added 2 slashes perpendicular from bottom till head. take a little salt, turmeric, and red chili. Mix well. Sprinkle this powder inside the walls of eggplants. On a tawa or pan take 1 tablespoon of fennel seeds, 1/4 teaspoon of fenugreek seeds, 1/4 teaspoon of mustard seeds, 1 teaspoon of cumin seeds, dry roast for few seconds, add 1/4 teaspoon of nigella seeds and roast further for few seconds, Put dry roasted ingredients in a mortar and pound it coarsely ground. dry roasted masala is ready, will use it later. Heat 1 cup of mustard oil in a wok and fry eggplants at medium flame. Fry until these upper skin becomes crispy and cooks these more than 60%. Eggplants are fried, now take these out on a plate. Strain this oil so that we can utilize the same in the next step or further. Heat up quarter cup mustard oil in a wok. Add a tablespoon of ginger garlic paste, fry for a minute, As oil is much as compare to ginger garlic paste, I am switching off the burner to add spices to avoid from burning. Add a tablespoon of coriander powder, 1 teaspoon of cumin powder, Add 1 tablespoon of Kashmiri chili powder optional, half a teaspoon of turmeric powder, add a teaspoon of salt, add red chili powder as per taste, a half teaspoon of chat masala, add coarsely ground spices, Mix well. Put it on low heat and fry for 1 minute. Add onion paste, Mix well. cook for 2 minutes at medium heat, cover the lid and cook for 3-4 minutes more at low heat. add tomato paste and mix. Cover the lid and cook for 5 minutes at low heat, Add fried eggplants, Mix well. Add 2 cup of water, Mix well. Cover the lid and cook for 5-7 minutes at low heat Achaari Baingan Masala is cooked and ready to serve. Serve hot, Garnish it with coriander leaves.
