Hi, everyone.
Today‘s Shojin ryori is【Vegan Mentsuyu】.
Mentsuyu is a seasoning made from dashi, soy sauce, mirin, and sugar.
It is used for noodle dishes such as soba noodles, udon noodles, and somen noodles.
It is a seasoning that is always contained in Japanese refrigerators.
Mentsuyu made from bonito stock and dried sardines is the mainstream, but today I would like to introduce 100% plant based Mentsuyu.
This is a versatile seasoning that can be used to make simmered dishes.

■Ingredients
400ml Water
150ml Soy sauce
150ml Hon Mirin
10cm×5cm Kombu kelp
3to5 Dried Shiitake mushrooms
1.5 tbsp Beet sugar
