BASE GRAVY RECIPE
➢Stage One (Boil all for 45 minutes)
White Onions – 4 kg (finely sliced)
Red Pepper – 1 (chopped)
Green Pepper – 1 (chopped)
Ginger & Garlic Paste – 50g
Green Chilli – 3
Salt – 5 tbsp
Monosodium Glutamate (MSG) – 1 tbsp
Star Anise – 2
Cassia Bark – 3 x 2.5 inch sticks
Ghee (Clarified Butter) – 400 ml
Water – to cover the ingredients
➢Stage Two (Boil again for 1 hour 15 minutes)
Taste of Indian brand MIX POWDER – 150 g - Link to Purchase:
Passata – 500 ml
Tomato Ketchup – 2 tbsp
Water – 1.5 litres
➢Finally …
Take out the cassia bark & star anise and blend into a very fine paste, adding water to gain a consistency of condensed milk. Put into takeaway tubs & freeze for future use. Lasts for months, and can be easily thawed out in the microwave for curry production!
►TIP: Leave the ingredients overnight to cool & then blend.
