How To Make Chunky Chili or Chili Con Carne

Описание: I love to make chili, especially cold weather. This is my family's favorite chili.
4 to 5 pounds ground beef
1 to 1 1/2 large onions chopped
1 to 1 1/2 TBSP minced garlic
Optional chopped bell peppers and or mushrooms
3 cans Bush's chili med or hot beans or I prefer to make my own (video link below)
2 cans red kidney beans
1 to 2 TBSP chili powder
1 to 2 tsp smoked paprika
1 to 2 tsp chipotle powder
1 tsp sugar
Salt and Pepper to your taste
1 TBSP garlic powder
1-2 cans stewed tomatoes, or diced tomatoes, or crushed tomatoes if desired (I didn't use them this time but often do)
32 to 40 oz tomato juice -- this depends on how thick or thin you like your chili and if you use the cans of tomatoes or not I use home canned tomato juice (video link below)
Optional-- you can top with shredded cheese, oyster crackers, sour cream, cowboy candy, banana peppers if desired.

Chop up ground beef in skillet and start to brown it. Add onions to ground beef. Add chopped garlic to skillet as well. If you are going to add bell peppers or mushrooms, now is the time to add to the meat mixture. Cook until browned. Drain grease off of the meat mixture.
While meat mixture is cooking, start warming your other ingredients in large pot. Add chili beans, kidney beans, chili powder, smoked paprika, chipotle powder, sugar, salt and pepper, garlic powder.
After draining grease off of the meat, add the meat to the pan with the bean mixture. If using the canned tomatoes, add them now. Add enough tomato juice to reached the desired thickness of chili you want.
Let chili simmer 30-60 minutes for the flavors to meld together. At this time, do a taste test to see if you need to add any additional seasonings to reach the level of heat you like.

You can top with add ins if desired.
