Chicken & Chips With Wild Garlic Butter | Thomas Straker

Описание: Back on the terrace after a few weeks away... nothing beats it. This is a nice and easy recipe I crack out when I don't have the energy, which I've spring-ified with the addition of wild garlic. If you're a country bumpkin I can't recommend getting out in the woods and going on a garlic hunt enough. It's a bank holiday after all.

INGREDIENTS: WILD GARLIC AND HERB BUTTER
400g Salted Butter
Half a bunch Parsley
200g Wild Garlic
The Juice and Zest of one Lemon
1 Clove of Garlic

1/2 Chicken
3 Potatoes
Mayonnaise
Rosemary
Olive Oil
Salt
Pepper

METHOD
Grate the Garlic Clove, pick the Wild Garlic and Parsley from their stalks, and blend with the rest of the Butter ingredients until cohesive and smooth. If you are using a whole Chicken, crack it down the back, remove the backbone, and split it in two. Peel and chop the Potatoes into fat chips and boil in salted water for 8 minutes before letting them steam dry. Paint the Chicken with the Garlic and Herb Butter and cook on medium-low heat for around half an hour, or until the internal temperature is about 75 degrees Celsius, basting every five minutes. Generously oil a pan and toss in your Chips, flipping and frying until beautifully crispy. Toss them with salt and a little chopped Rosemary, and serve with the chicken and the mayonnaise.
