Jerk & Cheese Tortilla Kebabs
600g Minced Beef
0.5 Red Bell Pepper
0.5 Green Bell Pepper
1 Small Red Onion
1 tsp Garlic Powder
1 tsp MSG
2 tsp Wet Jerk Seasoning
7g Fresh Coriander leaves
6-7 Large Flour Tortillas
10-12 Cheese Squares
Add the minced beef to a large bowl and season with salt and pepper.
Finely cube the onion and bell pepper halves and add them to the mince along with the spices and jerk seasoning.
Using your hands, mix all the ingredients together, making sure to squeeze them through your fingers to ensure a well-mixed consistency.
Put tortillas together and slice off the edges to turn them into squares.
Divide the mince into 6 or 7 equal portions, depending on how many tortillas you use.
Next, take a tortilla square and then spread a portion of the mince over the tortilla covering as much of the surface as possible. Repeat with the remaining tortillas.
Add the two slices of cheese to each tortilla placing them on top to make a checkered pattern.
Place the tortillas on top of each other lining up the edges, the top tortilla should not have any cheese on as this will just melt when cooking.
Using a very sharp knife cut into equal strips.
Turn each strip on the sides exposing the layers and gently squeeze them together.
Take 4 long skewers and place them at equal intervals through the tortillas.
Using the sharp knife slice between the skewers to form kebabs.
Heat a little frying or griddle pan and add oil.
Add in the kebabs and cook, turning the kebabs every couple of minutes until they are cooked all the way through.
Plate up and serve as a side or a main dish with rice or fries, lick your lips and enjoy.
