INGREDIENTS LIST

For cleaning:
Lime or Vinegar solution (for washing chicken)

Initial seasoning:
Salt
Black pepper
All-purpose seasoning (optional, use your favorite)
Homemade Jerk Marinade (~2 Tablespoons per chicken quarter)

Slaw:
2 cups of shredded cabbage
1 cup of shredded purple cabbage
1 cup of shredded carrot
1 cup of shredded cucumber
Salt (for seasoning)
Black pepper (for seasoning)
Sugar (for seasoning)
1 cup of vinegar (cane vinegar preferred, but others can work)
Fresh basil (about 1.5 tablespoons, chopped)

Jerk Sauce:
Oil (for cooking)
Brown sugar (for caramelizing)
Leftover jerk marinade from the chicken
Red Stripe beer (or another lager)
1 cup of ketchup
Juice of 1 orange
Soy sauce (splash)
