So simple. So flavourful and so very colourful! A brilliant pop of vivid green herb oil is a great way to preserve, and use, all that basil before it begins to wilt. And with only two ingredients!
Use Basil Oil as a dipper, drizzled over salad, eggs or steak. So many options.
Basil oil can be used as it is or strained through cheese cloth to create a clean bright green oil, ideal for plating and presentation. The basil leaves that are retained can be frozen in teaspoon portions and added to soups and stews as needed.
BASIL OIL
water
ice
1-2 bunches of fresh basil - leaves removed from stems
1-1 1/2 cups olive oil
Bring water to the boil.
Add basil leaves to boiling water for 10 seconds.
Remove from boiling water and place into iced water.
Strain excess water and add blanched basil to blender or food processor.
Add oil and lend until basil is well combined and oil becomes green.
Strain through cheesecloth if desired or use as is.
Store oil in the refrigerator for up to 1 month or freeze in portions (such as in an ice-cube tray) for up to 3 months.
