RECIPE:
For the POOLISH/STARTER:
100g strong bread flour
4 g dried yeast
100 ml warm whole milk
1 tbsp honey
For the DOUGH:
200 g strong bread flour
200 g plain flour
the fermented poolish
90 g caster sugar
1 large free-range egg
130 ml warm whole milk
1 tsp salt
60 g softened butter
130 g chocolate chips
Preheated oven - 190°C/ 375°F/ gas mark 5
