'Here’s what you’ll need for the cake…
• 10 tablespoons / 140 grams unsalted room temperature butter
• 1 cup sugar
• 3 large eggs
• 1 cup fresh whole milk ricotta
• 2 tablespoons plain yogurt
• 1 teaspoon vanilla extract
• The zest of 1 lemon
• 1¼ cups all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon salt
• 12-14 large strawberries, stem removed and cut in half
• About 2 tablespoons sugar (brown, white, coconut… whatever you like!)
Here’s what you do…
• Preheat oven to 350F
• Butter and flour a 9-inch spring form pan
• Get out your stand mixer or electric hand mixer
• Cream the butter 140 grams of softened butter and 1 cup of sugar until it is light and fluffy.
• Get your eggs ready. Add the 3 eggs, one at a time, making sure each one is incorporated
• Once things are smooth, add the 1 cup of ricotta, 2 tablespoons of yogurt, 1 teaspoon vanilla and the zest of 1 lemon and mix until fully incorporated.
• In a separate bowl, combine 1¼ cups of flour, 1 tablespoon of baking powder and 1 teaspoon salt. Mix together.
• Add the dry ingredients to the wet ingredients, mixing just until combined and no dry spots remain. Do not over mix!
• Pour the batter into your prepared baking dish and smooth out the top.
• Cut your strawberries down the middle and arrange them cut side up. Press each one gently into the batter.
• Sprinkle the top of the cake with 2 tablespoons of your sugar of choice.
• Bake the cake for 45 minutes. Make sure a skewer inserted into the middle comes out clean. If not, give it another 5 minutes until it does. Let me cake cool completely before cutting.
• *If you’d like your cake to have a more roasted top, proceed to the next step!
• Once the cake is done, move your oven rack up to the second highest position and turn the broiler on high. Broil the top of the cake for maximum 2 minutes, keep an eye on it!

• This cake is awesome on it’s own or with some whipped cream, crème fraiche, or even vanilla ice cream!
