One bite and you’ll fall in love with this fish fry
🐟 Vanjaram Fish Fry (King Fish Fry)
🧂 Ingredients:
• 5–6 Vanjaram (King fish) slices
• 1 tbsp ginger-garlic paste
• 1 tbsp red chilli powder
• 1 tsp turmeric powder
• 1 tbsp coriander powder
• Salt as needed
• A pinch kesari food colour (optional)
• 2 tbsp tomato puree
• 1 tbsp chopped coriander leaves
• 1–2 tbsp water (to make thick paste)
• Curry leaf stem – 1 small bunch
• 3–4 tbsp oil (for shallow frying)

🔥 Method:
1. Wash the fish slices and pat them dry completely.
2. In a bowl, add ginger-garlic paste, red chilli powder, turmeric powder, coriander powder, salt, kesari colour (optional), tomato puree, chopped coriander leaves and little water.
3. Mix everything into a thick smooth paste.
4. Apply this masala evenly on both sides of the fish slices. Marinate for at least 30 minutes for best flavour.
5. Heat oil in a pan on medium flame. Place curry leaf stems in the oil (this gives amazing aroma and prevents sticking).
6. Carefully place the marinated fish slices over the curry leaf stems.
7. Shallow fry on medium flame for 3–4 minutes on each side until golden brown and cooked through.
8. Do not flip too often to avoid breaking the fish.
9. Once both sides are crispy and golden, remove from the pan.
