Healthy Lentil Tomato Soup | One-Pot Protein-Rich Soup
A healthy lentil-based tomato soup that is nutritious, creamy, made without adding any cream. Red lentils give this soup a naturally rich and smooth texture, making it both comforting and healthy.
This is a one-pot pressure cooker recipe that comes together in very little time, perfect for busy days. Red lentils are high in protein, rich in fiber, and easy to digest, making this soup ideal for kids, elders, and the whole family.
It’s perfect for a light dinner, healthy lunch, or cozy evenings, especially during nice weather. This soup is so tasty and comforting—better than restaurant-style soup and can be enjoy or toasted bread.
Ingredients – Lentil Tomato Soup:
½ cup red lentils (washed and soaked for 20–30 minutes)
3 cups ripe tomatoes, chopped
1 medium carrot, chopped
1 small onion, chopped
3–4 garlic cloves, chopped
1 tbsp butter
Salt to taste
Black pepper to taste
2 tsp sugar (to balance acidity)
3½–4 cups water (adjust for consistency)
Procedure:
Heat a pressure cooker and add butter.
Add chopped garlic and onions, and sauté for a minute until soft.
Add the chopped carrot and soaked red lentils. Mix well.
Add 3 cups of chopped ripe tomatoes and mix everything together.
Add salt and black pepper. Pour in water and mix well.
Close the lid and pressure cook for 2 whistles. Switch off the flame.
Once the pressure releases completely, open the lid and blend everything well using a stick blender.
Place the cooker back on low flame and check the consistency.
Add more water if required. Adjust salt and pepper to taste.
Add 2 teaspoons of sugar to balance the flavours.
Let the soup simmer for 3–4 minutes. Switch off the flame and serve hot.
