Just in time for cooler temperatures, a hearty eggplant and tofu stew that will warm your tummy and your heart. This stew combines fresh vegetables, herbs and crispy tofu pieces to give you a beautiful mix of flavors and textures.
We made this version vegan, since we're going to feature several upcoming dishes that are Vietnamese vegan foods. Vietnamese also eat this dish with pork, and that's certainly one good option. Many Vietnamese go vegan during monthly religious celebrations, and with their devotion to only eating delicious things they've developed amazing dishes over a millennia of perfecting recipes!
