In this episode, we're cooking up a mainstay in most Filipino households, but we're doing it the Chabacano way: with only atsuete and vinegar, and no soy sauce! After simmering, we're left with succulent pieces of pork and chicken coated in a scrumptious glaze! 🥩🍗
Ingredients:
1/4 kg pork liempo
1/4 kg chicken thighs
2 pcs green finger chillies
5 cloves garlic
1 tbsp whole peppercorns
4 pcs bay leaves
1/4 cup atsuete seeds
1/2 cup warm water
1/4 cup coconut vinegar
Salt to taste
Gather your ingredients, cook a large pot of rice, and get ready to tantalize your tastebuds with this hearty and comforting Zamboangueño soul food!
