Florida strawberries are so yummy!
I decided to make something different
Strawberry Lemon Marmalade
from The Ball Blue Book
for this recipe you are going to need canning jars, canning lids and rings and a water bath canner and our large stock pot to processing.
Recipe
4 cups strawberries, washed, capped, crushed
1 small lemon, thinly sliced
1 tablespoon lemon juice
6 tablespoons powdered pectin
6 cups sugar
prepare strawberries, set aside
Wash the lemon and cut in half 1/2 used to juice enough lemon juice for 1 tbsp and set aside then
in a small pan add enough water to cover the thinly sliced lemon peels. add 1 tablespoon sugar this wasn't in the recipe but I did it because I wanted him to be a little bit sweeter. Cook for about 5 to 10 minutes or until they are tender.
in a large stock pot you want to add the strawberries the lemon peel strained from the water discard the water the pectin and the one tablespoon of lemon juice.
bring this to a rolling boil making sure your stirring constantly so not to let it scorch or burn on the bottom because it can because the only liquid you have in here is the lemon juice at this time So over medium heat until it is a rolling boil.
when it comes to a rolling boil you're going to immediately add the six cups of sugar and you're going to stir it together until the sugar is dissolved then turn it on medium high heat until it also comes to a rolling boil. when it is a rolling boil which means you cannot stir it down it continues to boil You're going to time for exactly 1 minute. then remove from heat and set on the tea towels like I did and ladle into your jars. wipe the jars put the lids and rings on them and place them in the water bath canner or stock pot. bring this to a boil and then time for either pints like I did which was 20 minutes or if you're using half pints you want to boil for 10 minutes. turn off the heat let stand for about 5 minutes depending on what the air temperature is possibly 10 minutes then remove the jelly jars and put them on the tea towel and let them stand for 12 to 24 hours. you'll hear them start to pop and that means they're sealing😊
