Ingredients:
Pork Shoulder
Mustard
Rub
Apple Cider Vinegar
Cola
Brown Sugar
Butter
Bacon
Maple Syrup
Cheese Curds (We used "Squeakers" from Bothwell Cheese https://www.bothwellcheese.com)
Gravy (Flour, Butter, Beef Stock)
Potatoes
RECIPE
Pulled Pork:
Trim the excess fat off of the pork shoulder. Cover your pork shoulder with mustard or another binder so you can apply your favourite rub and let it sit for at least 15 minutes to absorb the flavour. Place your pork shoulder on the smoker and cook at 250 to 275 degrees fahrenheit until you reach an internal temperature of 160 degrees. Baste every hour with apple cider vinegar and cola to keep moist. Once you have hit 160 degrees, take the pork shoulder off the smoker and wrap in tin foil with some butter and brown sugar. Place back on the smoker and cook to an internal temperature of 205 degrees. After you hit 205, you can remove it from the smoker and let it sit for a bit to cool down before pulling the meat.
Candied Maple Bacon:
Lay out your bacon strips on a couple pieces of tin foil. Cover the bacon with a mixture of rub and brown sugar. Place on the grill. After about 20 minutes, flip the bacon and brush with maple syrup and sprinkle on more brown sugar. Let it cook for another 20 minutes. Then you can pull it off the grill and let it cool to harden up.
Gravy:
Melt 1/2 a cup of butter in a saucepan. Add in 1/2 cup of flour and stir until you get a loose dough consistency. Gradually add in the beef stock and stir while it thickens up. Add in salt and pepper to taste.
Fries:
Slice potatoes into steakhouse cut size. Place in 350 degree oil for 6-7 minutes to achieve a golden brown color. Remove from oil and sprinkle salt over the fries for taste.
Assembly:
In a large dish, place your fries on the bottom. Spread cheese curds over the fries. Spread your pulled pork on top. Drizzle gravy over top. Sprinkle small pieces of bacon over top.
