Quebec is the only Canadian province where French is the sole official language, and for centuries, that distinct identity has shaped everything about the way its people cook, eat, and celebrate. But while the world has heard of poutine, most people have no idea how deep the Quebec food history actually runs.
In this episode, I trace the origins of ten foods born in this province. From the poutine origin story and its three-town dispute, to the tourtière history of a spiced meat pie eaten by settlers in the 1600s, to a poor man's pudding invented by Depression-era factory workers who had almost nothing left in the cupboard. Some of these dishes sparked food wars that are still being fought today: Montreal smoked meat vs pastrami, Montreal bagel vs New York bagel. Battles with a hundred years of history behind them. Some never crossed the provincial border despite being eaten by millions every morning. And some carry Indigenous food history that the history books rarely mention.
