Blueberry Lemonade recipe
Servings: 2
Diet: Gluten Free, Low Fat, Vegan
Allergen: No Common Allergens
Ingredients
1 cup (125 g) Blueberries (for the syrup)
0.25 cup (30 g) Blueberries (to serve)
2 tablespoon Fresh mint
0.25 cup (60 ml) Maple syrup
3 cup (750 ml) Water still
0.33 cup (80 ml) Lemon juice
1 cup (250 ml) Soda water
Instructions
1) Put the blueberries for the syrup into a saucepan with the maple syrup, fresh mint and a splash of still water .
2) Heat over a medium heat for 5 minutes, gently pushing the blueberries down with a spoon so they burst.
3) Transfer the heated blueberries to a fine mesh sieve and strain over a bowl. Allow to cool for about 5 minutes. This is the blueberry syrup.
4) Pour the soda water and lemon juice into a tall carafe.
5) Add the remaining blueberries.
6) Pour in the blueberry syrup and top up with the still water.
7) Serve over ice.
Notes
Give the jug a good stir before serving as the berries will settle at the bottom and the syrup and water can start to separate - this ensures perfect flavor every time.
