This is an easy and fresh vegetarian grilled eggplant with tahini, mint, pomegranate and buttery toasted pine nuts. The eggplants and roasted in the oven and then dressed in a lemony tahini sauce, torn mint leaves, pomegranate seeds and finished with toasted pine nuts in hot melted butter.
